Erin’s Yummy Vegan Spice Muffins


4 c. unsweetened applesauce
3 tsp. baking soda
½ c. oil

1 c. brown sugar (if you use agave you can use up to 1 c. – you must lessen the oil and increase the flour to make sure it’s not too runny)
3 c. wonder flour OR 4 c. oat flour
3 tsp. cinnamon
1 tsp. allspice
½ - ¼ tsp. cloves
½ tsp. nutmeg
1 tsp. salt

Turn oven on to 350 and line muffin pan(s) with paper liners.  Combine applesauce and soda and let foam for about 5 min. (adding oil at this stage will cause the muffins to be very dense).  Combine dry ingredients in large bowl.  Create a well in the center of the dry mixture and add applesauce/soda mixture and oil.  At this point you can add 1 c. each of the following: grated carrots, shredded unsweetened coconut, nuts, or raisins.  Bake for 30 minutes.  Makes about 2 dozen muffins. 
 
Wonder Flour

1 part spelt flour
1 part barley flour
1 part brown rice flour
